Any annual holidays you don’t use carry over to the next year, but you can’t build up holidays if your boss wants you to take them at a certain time. You can carry over up to 15 days' sick leave from previous years, so you could have up to 20 days of sick leave in a single year. This is a minimum - your contract may let you build up more.
